Oaxaca No.1 is an exceptional mezcal crafted in the historic and famous region of Oaxaca, specifically in Santiago Matatlán, the mezcal capital. The selected agaves, noble varieties Espadín and Tobala, are carefully harvested at optimal maturity. They are slowly cooked in a traditional underground oven made of stone and black oak, which imparts deeply earthy smoky aromas to the mezcal. Extraction is carried out using the tahona, a large stone wheel traditionally pulled by an ox, which gently crushes the piñas — the roasted agave hearts — to preserve complex flavors. Natural fermentation takes place in wooden vats, where agave fibers and pulque, a traditional mezcal "wine," are added as a starter for optimal aroma development. Double distillation is performed in copper stills, ensuring purity and finesse. Finally, a controlled maturation of at least 60 days in glass refines the flavor balance and offers a mezcal that is both powerful and harmonious.
