Today, under the visionary leadership of Yves Assier de Pompignan, a direct descendant, the distillery and the Habitation du Simon continue this ancestral know-how, enriched with a contemporary touch. The heart of the process relies on the use of a rare copper Charentais still named “Belle Aline” – an apparatus with 7 plates, which gives rhum A1710 a remarkable aromatic complexity.
The bold challenge of Stéphanie Martin, Cellar Master of the House, for the creation of the Renaissance cuvée: to find the perfect balance between freshness, complexity, lightness, and power. The result is an exceptional white rum, ideal both as an aperitif and a digestif, to be savored during special moments. This feat is based on a slow fermentation (5 to 6 days) of pure fresh cane juice, carried out with rigorously selected oenological yeasts. The distillation, meticulously performed in “Belle Aline,” is followed by a short maturation in barrels that previously held Cognac, bringing finesse and elegance to the aromas.
