Conceived by a talented collective bringing together four partners, including the renowned Jean Dujardin, this French rye whisky highlights workshop know-how as well as contemporary and assertive elegance. The objective of the estate: to offer a gastronomic rye whisky , precise, respectful of its terroir and the influences of the Atlantic, combining oceanic freshness and the complexity of the French oak barrel in an authentic balance.
The production is based on a majority of certified organic rye, fermented slowly to ensure a clear aromatic profile, then distilled in small batches in a traditional pot still . The four-year aging in French oak barrels gives a silky texture and deploys nuances of refined spices while emphasizing the natural straightness and purity of the rye. The 43% bottling offers a remarkable balance between aromatic intensity, roundness and ease of tasting, resulting in a full, precise and perfectly controlled mouthfeel.
Nose: The subtle markers of rye are immediately expressed: baking spices, sweet pepper, caraway seeds, a hint of cinnamon, enhanced by notes of orange peel, dried flowers and delicate honey. Palate : Straight and generous, it develops flavors of toasted cereal, natural vanilla from the oak, hazelnut, cocoa, all structured by a very pleasant sapid tension, without heaviness. Finish : Long, clean and elegant, it reveals a spicy and woody filigree of great finesse, and a delicate saline note highlighting the marine and Atlantic influence of the Bordeaux region.
