Hatozaki is a Japanese whisky brand created by the Kaikyō distillery . The Kaikyō distillery is located in the Hyogo region, facing the Seto Inland Sea. There, summers are hot and humid with temperatures approaching 39°C, winters are mild and dry, and sea winds blow day and night in front of the distillery. These are optimal conditions for aging whisky and developing distinctive aromas. The Yonezawa family settled in the city of Akashi in 1856. After mastering the art of sake brewing, the family began distilling in 1917. A century later, Kimio Yonezawa, the master blender, is honoring his legacy. Through methodical apprenticeship and exchanges with other Master Distillers and Blenders, particularly based in Scotland, Kimio Yonezawa is contributing to the growing development of Japanese whisky.
Hatozaki Triple Cask is made entirely from malt aged in former Bourbon and Sherry casks , then finished in Umeshu casks .
