Cognac Pasquet - L'Organic 07 - 7 years - 40%
The prestigious Cognac House Pasquet is ideally located at Chez Ferchaud-Eraville, in Bellevigne in the Charente, the historic heart of cognac production. Since 1970, when Jean-Luc Pasquet inherited it from his uncle Albert, the management of this exceptional terroir, originally comprising 8 hectares of vines, has evolved to now cover 14 hectares carefully cultivated under certified organic farming since 1995. This sustainable commitment guarantees grapes from environmentally respectful viticulture, enhancing the quality of the eaux-de-vie. The traditional 20-hectolitre still allows for meticulous double distillation, ensuring spirits of exceptional finesse and richness. Each eau-de-vie is then patiently aged for a minimum of 4 years, which is 2 years longer than the legal aging in oak barrels, to obtain the true "Cognac" appellation. Today, the House is proudly led by Jean Pasquet and his wife Amy, originally from the United States, who continue the family tradition with passion and expertise.
L’Organic 07 is an exceptional cognac, made from the emblematic Ugni Blanc grape variety, carefully cultivated within the prestigious terroirs of Petite and Grande Champagne. This cuvée benefits from an extended aging of at least 7 years in selected oak barrels, offering a perfect balance between aromatic complexity and elegance on the palate. Its organic character and long maturity give this cognac delicate, fruity, and woody notes, ideal for connoisseurs seeking authenticity and excellence.
