The Kilchoman Distillery, emblematic of the island of Islay, was established in 2005 at the Rochside farm, near Machir Bay, on the undisputed west coast of Scotland. Founded by Anthony Wills, a converted wine expert, this distillery aims to perpetuate the tradition of artisanal whisky, produced on a small scale, faithful to artisanal and local values. Mark and Rohaise French, farmers at Rochside farm, commit to using only strictly local raw materials, reflecting an ethical and sustainable approach, a true signature of Kilchoman's know-how.
The entire production is 100% integrated: the barley is grown and malted on site, and the various maturation steps up to bottling take place within the distillery itself. The pure water comes from a natural spring located on Cnoc Dubh, just above Rochside farm. Kilchoman single malt whisky is distinguished by its complete absence of chill filtration and caramel coloring, guaranteeing the authentic expressiveness of the spirit. The alcohol content is standardized at 50% ABV, delicately adjusted with Islay water. Since November 2005, distillation has continued an artisanal tradition using two stills with a total capacity limited to 90,000 liters per year, favoring quality over quantity.
About 80% of the whisky matures in US bourbon barrels originally from the prestigious Buffalo Trace distillery in Kentucky, while the remainder benefits from aging in 250-liter Oloroso sherry butts from the Bodega Miguel Martin in Spain. Kilchoman also explores unique finishes using a carefully selected range of casks: Sauternes, red wines, rum, port, Madeira, and cognac, as well as experimental barrels kept secret, bringing complexity and originality to its releases.
The Madeira Cask Matured embodies the excellence of Kilchoman distillation, distilled in May 2016 and then matured exclusively in 46 new Madeira hogshead casks, where it aged for over 5 years. This second edition of this Madeira Cask matured whisky, exclusively aged in new casks, delivers a unique aromatic richness, combining the typical peaty notes of Islay with the sweet and fruity influences of Madeira.
Peaty
