The Fox Distillery, located in Gignac at the heart of the prestigious Terrasses du Larzac vineyard in the Languedoc, is a true gem of French artisanal expertise. Founded in 2021 by Simon Tardieu, the distillery is firmly committed to producing natural and organic spirits, fully aligned with the Natural Spirits Manifesto. This movement honors the creation of environmentally excellent eaux-de-vie, distinguishing itself from so-called artisanal distilleries, which are often allowed under a European specification considered too permissive regarding additives and inputs.
At the Fox Distillery, every step of the manufacturing process is carefully executed, respecting both the environment and tradition. Distillation is carried out in a traditional 350-liter copper still, heated by wood fire, to preserve the authenticity and aromatic richness of each spirit. All ingredients are rigorously selected, exclusively sourced from local organic agriculture and an exceptional terroir. No additives, sugar, sweeteners, or artificial flavors are added to ensure a pure and natural organoleptic profile. Simon Tardieu categorically rejects the use of industrially refined alcohol at 96%, still imposed by European regulations for many appellations such as Gin or Pastis. Instead, he favors producing his alcohol bases from a first distillation of wine or beer, reaching about 30% alcohol, followed by a second distillation to isolate the heart of the distillate and achieve purity around 70%.
The final step involves distilling this organic alcohol once more with carefully selected botanicals to develop the unique aromatic palette of each recipe. This artisanal process, respectful of the product and the environment, explains the absence of official certification under the appellations “Gin” or “Pastis,” but offers unmatched authenticity and typicity.
