BIMBER - Ex Bourbon Cask - Small Batch No. 3 - 51.60%

The Bimber Distillery is located in the heart of London, England. Founded by whisky enthusiasts with bold ambitions, Ewelina Chruszczyk and Dairusz Plazewski, it is dedicated to producing an exceptional Single Malt, rich in character and authenticity. The distillery relies on artisanal and traditional methods that are almost lost nowadays to ensure impeccable quality. The barley used is grown exclusively on a single local farm, malted on the floor in an artisanal way, then manually ground before a slow seven-day fermentation process in wooden vats carefully crafted in their own cooperage. The heating of the small copper stills is done by direct fire to enhance the distillate, which then matures in carefully selected casks to create a harmonious whisky. All blending and bottling operations take place directly at the distillery, ensuring optimal traceability. The first Bimber casks were filled on May 26, 2016, and the first limited edition release of 1,000 hand-numbered bottles took place in September 2019, selling out in just 3 hours. Since 2020, Bimber has expanded its catalog with a varied range of exceptional Single Malt whiskies that captivate connoisseurs worldwide.

This exclusive edition is a Clos des Spiritueux exclusive. Bottled directly at the distillery, this whisky comes from a single cask that previously contained Bourbon. Only 5,000 copies were produced, guaranteeing a rare and sought-after character.
