The Bimber Distillery, a handcrafted gem located in London, England, is renowned for its traditional and meticulous approach to whisky. Founded by two enthusiasts, Ewelina Chruszczyk and Dairusz Plazewski, this distillery aims to create an exceptional Single Malt, combining aromatic richness and unique character. Every production step is carried out with extreme care: the barley is grown exclusively on a dedicated farm, malted by hand on the floor using ancestral methods, then ground artisanally. Fermentation takes place slowly over seven days in wooden vats handmade in their own cooperage, giving the whisky exceptional complexity. The copper stills are heated by direct fire, ensuring precise distillation rich in flavors. The whisky then matures in carefully selected casks, bringing depth and finesse to the finished product. The entire process, from blending to bottling, is done on site, ensuring controlled quality from start to finish. The first Bimber casks, put into maturation on May 26, 2016, were marketed only three years later, in September 2019, as an exclusive limited edition of 1,000 hand-numbered bottles, quickly sold out in just 3 hours. Since 2020, Bimber has regularly expanded its range of innovative and refined Single Malts for connoisseurs.
This precious edition was rigorously selected by La Maison du Whisky in its prestigious Antipodes collection. It is an exceptional Single Cask (#461), aged in a peated Bourbon barrel, which produced only 245 bottles rare and sought after by lovers of complex and authentic peated whiskies.
