BIMBER - Single Sherry Cask #46 - 58.50% ABV
The Bimber Distillery is located in London, England. Founded by two whisky enthusiasts, Ewelina Chruszczyk and Dairusz Plazewski, this ambitious distillery aims to produce an authentic and exceptional Single Malt, rich in character, using traditional artisanal methods that are rare in today's industry. The barley used comes exclusively from a single local farm, ensuring unmatched traceability and quality. The barley is then floor-malted by hand according to ancestral methods, carefully ground before undergoing a slow seven-day fermentation in wooden vats handcrafted in their own cooperage. The small copper stills are heated directly by fire to preserve all the organoleptic nuances of the spirit. Finally, the whisky matures in carefully selected casks chosen for their ability to develop complex aromas. All production is completed on-site, where blending and bottling are carried out with the utmost care. The first Bimber casks were filled on May 26, 2016, and their first release took place in September 2019: the limited series of 1,000 hand-numbered bottles sold out in just 3 hours. Since 2020, Bimber Distillery has expanded its portfolio with a refined range of Single Malts recognized for their excellence.
This exceptional limited edition comes from a single cask (Single Cask No. 46) that previously held a Pedro Ximenez Sherry, a renowned Jerez wine known for its richness and sweetness, aged in a Solera for several years, allowing the whisky to develop intense and indulgent notes. Only 315 bottles were produced, ensuring a precious rarity for enthusiasts and collectors.
