The Bimber Distillery is located in the heart of London, England. Founded by whisky enthusiasts Ewelina Chruszczyk and Dairusz Plazewski, this craft distillery aims to produce an exceptional Single Malt, rich in character and authenticity, using traditional methods rare in today’s industry. The barley used is grown exclusively on a single farm, then malted in the old-fashioned way, directly on the floor. The entire malt is then hand-ground and slowly fermented for seven days in wooden vats handcrafted in their own cooperage. The copper stills, heated by direct fire, allow precise and respectful distillation of the product. The spirit is carefully aged in barrels selected with the utmost care before being blended and bottled directly at the distillery. The very first Bimber barrels were filled on May 26, 2016, and marketed three years later, in September 2019. This limited edition of 1,000 hand-numbered bottles sold out in just three hours, demonstrating the brand’s spectacular success. Since 2020, Bimber has expanded its range with several new exceptional Single Malts, combining tradition and innovation.
This exclusive edition was carefully chosen by Clos des Spiritueux as part of its prestigious Antipodes range. It comes from a single cask (#440) that previously held a prestigious Sherry Oloroso, which gives this whisky complex and refined notes. This rare selection allowed the production of only 285 bottles, enhancing its unique character and collectible value.
