The Akkeshi Distillery is located on the island of Hokkaido, in the wild and preserved north of Japan, an exceptional terroir for the production of rare and exceptional whiskies. Founded by Keiichi Toita, president of Kenten Co. Ltd, this house embodies the tradition and innovation of Japanese whisky. The history of the Akkeshi distillery began in 2013, when the company committed to exploring different aging methods by experimenting with various batches of raw spirits purchased from two famous Japanese distilleries. Construction started in 2015, in a marshy area characterized by a thick layer of peat, with soft soil extending up to 50 meters underground. Faced with this unique geological challenge, the Akkeshi distillery resorted to the Columbus construction method: an ingenious process that involves removing the earth beneath the foundations and replacing it with polystyrene fill, thus allowing the distillery to be built on such unstable ground. In 2016, specialists from Forsyths, Scotland — a world reference in still manufacturing — came to install the key equipment, giving Akkeshi distillery the ability to produce whiskies according to traditional Scottish methods, in the pure tradition of the legendary Islay whiskies. The first official release of a Single Malt by the Akkeshi distillery took place in 2018, marking a turning point in the world of Japanese whisky.
This refined blend ("blended"), named Usui, is made from more than half malts from the Akkeshi distillery, carefully married with freshly distilled grain spirits imported. The whole is patiently matured in casks selected at the Akkeshi distillery for over three years, ensuring aromatic complexity and the typical elegance of the house.
