Ichiro’s Malt is a prestigious company specializing in independent bottling of exceptional Japanese whisky. Founded by Ichiro Akuto in an intimate workshop in Chichibu, a charming town located 100 km northwest of Tokyo, this house began with only two small artisanal stills, embodying passion and traditional know-how. Akuto's expertise in distillation comes directly from the family business, a true historical pillar. His grandfather was originally a sake master brewer and ran the famous Hanyu distillery, founded in 1625, which obtained an official whisky distillation license in 1941. Akuto's father continued this family venture with dedication, notably investing in two Scottish stills capable of producing about 400 casks of remarkable quality. In 2000, faced with a difficult economic context in Japan and a notable decline in sake consumption, the family had to sell their historic business. Nevertheless, Ichiro Akuto managed to turn this crisis into a unique opportunity by buying back the stills as well as the precious whisky casks in maturation from the new brewery owners.
Today, Ichiro Akuto perpetuates and reinvents the ancestral techniques learned at the Hanyu distillery, positioning himself as one of the most innovative and ambitious Japanese distillers. More than 4,000 carefully selected casks – including sherry, wine, and bourbon barrels – are currently aging, demonstrating an unwavering commitment to excellence. Furthermore, he has initiated bold experiments aimed at local barley cultivation, with the ultimate goal of creating a truly authentic, 100% Japanese whisky embodying the spirit of the terroir.
