The Port of Leith Distillery is an innovative Scottish distillery located in Edinburgh's historic Leith district. It was founded by Ian Stirling and Paddy Fletcher, and opened in October 2023 after four years of construction. It is the UK's first vertical distillery, rising nine stories to a height of 40 meters. Designed to optimize space in an urban environment, the distillery adopts a gravity-fed production process: malting begins on the upper floors and the whisky gradually descends to cask. This approach reduces energy consumption and incorporates sustainable practices , such as the use of renewable energy and the reduction of plastic waste.
Whisky production began in 2024, but as the spirits require a minimum ageing of three years, the distillery also offers other products, such as Lind & Lime gin, Oloroso sherry and Tawny port, in collaboration with renowned producers.
Lind & Lime is made with 7 organic botanicals : juniper berries, lime peel, pink peppercorns, coriander seeds, angelica root, orris root, and licorice root.
