The Port of Leith Distillery is an innovative and avant-garde Scottish distillery located in Edinburgh, in the heart of the historic and port district of Leith. Founded by Ian Stirling and Paddy Fletcher, it was inaugurated in October 2023 after four years of meticulous construction. A true architectural and technological gem, it is the first vertical distillery in the United Kingdom, rising over nine floors to reach an impressive height of 40 meters. Designed to maximize space usage in a dense urban environment, this revolutionary distillery adopts a unique gravity-based production process: malting begins on the upper floors, and the whisky naturally descends through the different levels until it is put into aging casks. This innovative method not only optimizes energy efficiency but also integrates essential sustainable practices, such as the exclusive use of renewable energy and a strict policy to reduce plastic waste, thus contributing to environmentally friendly spirit production.
Whisky production officially began in 2024, although, according to regulations, whisky requires a minimum aging of three years before commercialization. To diversify its offer and meet immediate demand, the distillery also offers an exceptional range of other refined spirits, including the famous Lind & Lime gin, crafted according to artisanal recipes, as well as prestigious liquors like Oloroso sherry and Tawny port, resulting from exclusive collaborations with renowned producers recognized for their traditional expertise.
Lind & Lime is an exceptional artisanal gin produced from a unique blend of 7 organic botanicals carefully selected: juniper berries for the classic note, lime zest for a fresh and tangy touch, pink peppercorns adding character, coriander seeds offering a spicy subtlety, angelica root and iris root for aromatic balance, and finally licorice root which provides depth and sweetness.
