The Port of Leith Distillery is an innovative Scottish distillery located in the heart of Edinburgh's iconic Leith district. Founded by Ian Stirling and Paddy Fletcher, it opened in October 2023, becoming the UK's first vertical distillery. Its impressive structure rises nine stories high, reaching a height of 40 meters, optimizing urban space for modern and responsible production. Thanks to its unique gravity-fed system, the production process begins with malting on the upper floors, allowing the wort to descend floor by floor until it is casked. This cutting-edge method significantly reduces energy consumption and positions the distillery as particularly environmentally conscious, prioritizing renewable energy and minimizing plastic waste.
Although whisky distillation began in 2024, the strict adherence to the required three-year maturation period has led the distillery to offer a unique range of Scottish spirits in the meantime. These include the renowned Lind & Lime Gin , as well as Oloroso Sherry and Tawny Port crafted in collaboration with exceptional producers. This strategy allows the Port of Leith Distillery to showcase its expertise while awaiting the release of its first single malts.
Lind & Lime Gin stands out thanks to its use of seven carefully selected organic botanicals : juniper berries, lime peel, pink peppercorns, coriander seeds, angelica root, orris root, and licorice root.
