This revolutionary technique reduces the pressure inside the still, thereby lowering the boiling temperature of the alcohol. This process ensures a gentle distillation that preserves the integrity and aromatic freshness of the botanical plants used, without cooking them. Every step of the manufacturing process, from maceration time to the selection of botanicals, through precise distillation – controlling temperature, pressure, and duration – is adapted according to the unique character of each plant. After distillation, the plant extracts are blended with an exceptional French neutral grain alcohol. Audemus Spirits stands out with an exclusive range including gin, aromatic liqueurs, complex bitters, and rare hybrid spirits, all crafted with exceptional artisanal expertise.
Umami Gin is an exceptional gin made from wild capers sourced from the sunny south of Italy, delicately distilled at 45 degrees to preserve their incomparable iodized and fresh aroma. This refined distillation is then combined with an infusion of Parmigiano-Reggiano, a premium Italian cheese naturally rich in glutamate, the essential compound responsible for the umami flavor, the fifth taste recognized for its richness and depth. This signature blend is harmonized with juniper, two other carefully selected botanical ingredients, and a base of high-quality neutral grain alcohol. The whole is then rested in an old cognac barrel, imparting complex woody notes and a unique aromatic maturity after several months of aging.
