The Saint-James Distillery is located in the heart of Martinique, an island globally renowned for the quality of its agricultural rums. This journey began with Reverend Edmond Lefébure, then Superior Father at the Brothers of Charity convent, and a chemistry enthusiast. He quickly recognized the exceptional potential of spirits made from local sugarcane and decided to start production himself, combining traditional know-how with scientific rigor. In 1973, the Cointreau company acquired Saint-James Rums and centralized production in the town of Sainte-Marie. It was only in 2003 that the distillery became property of the La Martiniquaise group, a major player in spirits in France and internationally.
Saint James rum is crafted using the authentic method of fermentation followed by distillation in a Creole column from pure sugarcane juice. This traditional technique, certified A.O.C Rhum de la Martinique, guarantees a unique aromatic richness and makes Saint James rums perfectly suited for aging in high-quality oak barrels. True to its commitment to purity, no sweeteners or additives are allowed in its composition. The Saint James distillery also embraces a sustainable economy and environmental responsibility approach. The sugarcane fields located immediately near the distillery significantly reduce CO2 emissions related to transport. The bagasse, the fibrous residue from pressing the cane, is fully utilized: it fuels boilers to produce the steam needed for distillation and milling, is transformed into compost, or converted into electricity via a turbo-alternator. Furthermore, the vinasse – the liquid residue from distillation – is rigorously treated to produce water reused for plantation irrigation, thus ensuring a virtuous ecological cycle.
