Kavalan is a renowned distillery located in Yilan County, in the heart of Taiwan. Founded in 2005 by the visionary entrepreneur Mr. Tien-Tsai Lee, it released its first bottling in 2008. Driven by the ambition to create Taiwan's first exceptional whisky, T.T. Lee propelled Kavalan among the most sacred and respected distilleries in Scotland and Japan. This international recognition was notably reinforced when the famous critic Jim Murray awarded their Solist Fino Sherry Cask the prestigious title of "New Whisky of the Year" in his 2012 Whisky Bible. The distillery is an integral part of the industrial group King Car Group, a guarantee of quality and constant innovation.
Kavalan's exceptional quality relies on pure, mineral-rich water sourced from Snow Mountain, as well as a unique maturation combining intense heat and high humidity, modulated by sea and mountain breezes. Taiwan's warm subtropical climate promotes accelerated whisky maturation, much faster than in most producing countries. The distillery applies a meticulous traditional double distillation technique: the first step separates alcohol and water, while the second is carried out in three distinct phases — the head (the first distillates), the heart (the noble part), and the tail (the last distillates). Only the central part of the heart is carefully selected to join the aging casks. The rigorous selection of casks plays a crucial role in developing Kavalan whisky's unique and deep aromas. Once the ideal maturation is reached, the casks are emptied and then adjusted with pure "Kavalan" water to achieve the perfect alcohol content, except for cask strength bottlings.
This remarkable Single Cask was aged in an old Bourbon barrel (#B150716058A) and bottled at 54%, guaranteeing intensity and aromatic complexity. This exclusive limited edition produced only 164 numbered bottles, intended for discerning enthusiasts and knowledgeable collectors.
