Kavalan is an iconic distillery located in the exceptional county of Yilan, in the heart of Taiwan. Founded in 2005 by the visionary entrepreneur Mr. Tien-Tsai Lee, it quickly established itself on the international scene with its first bottling in 2008. Driven by the desire to create the first premium Taiwanese whisky, T.T. Lee elevated Kavalan among the most prestigious distilleries, competing with the finest Scotch and Japanese whiskies. The recognition came notably thanks to the famous critic Jim Murray, who awarded the "New Whisky of the Year" prize to the Solist Fino Sherry Cask version in his Whisky Bible 2012. The distillery now belongs to the renowned industrial group King Car Group, a guarantor of quality and constant innovation.
Kavalan draws its waters of unique mineral richness directly from the majestic Snow Mountain, and the spirits mature in a singular combination of intense subtropical heat, tempered by sea and mountain breezes. This warm subtropical climate offers accelerated maturation conditions, allowing the whiskies to develop an unparalleled aromatic complexity much faster than in most traditional whisky-producing regions. The distillery rigorously applies the traditional double distillation method: the first step separates alcohol and water, while the second, divided into three phases — head, heart, and tail — allows selecting only the best part of the heart. It is this precise selection that is then aged in carefully chosen casks. The meticulous choice of casks is fundamental to reveal the characteristic aromas and depth of the whisky. Once optimal maturation is reached, the whiskies are diluted with pure "Kavalan" water to achieve the perfect alcohol content, except for cask strength versions.
