The secret to Kavalan's rich aromatic profile lies in its pure, mineral-rich waters sourced from the Snow Mountain, as well as in a unique aging process combining intense heat and humidity, softened by fresh breezes from the sea and surrounding mountains. Taiwan's warm subtropical climate promotes rapid and optimal maturation of spirits, much faster than in most other whisky-producing regions worldwide.
The distillery applies a rigorous double distillation method to guarantee the purity and quality of its whiskies. The first distillation separates alcohol from water, while the second is divided into three fractions: the head, the heart, and the tail. Only the best part of the heart is retained and placed in casks for maturation. The meticulous selection of casks is a key element that deeply influences the final aromatic profile of the whisky. Once the whisky reaches the desired maturity, the selected casks are carefully emptied, then the unique "Kavalan" spring water is added to adjust the alcohol content, except when bottling is done at cask strength.
