Kavalan is an exceptional distillery located in Yilan County, Taiwan, globally recognized for its whiskies of remarkable quality. Founded in 2005 by the visionary entrepreneur Mr. Tien-Tsai Lee, it unveiled its first bottling in 2008, marking the beginning of a unique journey in the world of whisky. A pioneer of Taiwanese whisky, T.T. Lee has elevated Kavalan among the most prestigious distilleries, alongside those of Scotland and Japan. This reputation was notably confirmed when Jim Murray awarded the "New Whisky of the Year" prize in 2012 to the Solist Fino Sherry Cask in his famous Whisky Bible. Kavalan belongs to the industrial group King Car Group, thus guaranteeing uncompromising expertise and standards.
The Kavalan distillery benefits from a source of pure water naturally rich in minerals, coming from the majestic Snow Mountain. The maturation of its whiskies takes place thanks to a unique subtropical climate, combining intense heat and humidity tempered by sea and mountain breezes. This hot and humid climate significantly accelerates aging, allowing the spirits to develop a rare aromatic complexity in the whisky world in less time. Kavalan rigorously applies the traditional double distillation: the first step separates alcohol from water, while the second, divided into three fractions – the head, the heart, and the tail – isolates the best part, called the heart, which is then aged in casks. The meticulous choice of casks, a key element in the whisky's aromatic profile, is a strategic step that directly influences the richness and depth of flavors. Once optimal maturity is reached, the casks are opened and a precise dilution with pure "Kavalan" water adjusts the alcohol degree before bottling, unless the whisky is presented cask strength.
The Kavalan Concertmaster Port Cask Finish is a masterpiece of the house: it is initially aged in American oak casks specially selected for their quality, before benefiting from a careful finish in Ruby Port casks, giving it intense fruity notes and a warm roundness that seduces demanding whisky lovers.
