Kavalan is a prestigious distillery located in Yilan County, Taiwan, globally recognized for the exceptional quality of its whiskies. Founded in 2005 by visionary entrepreneur Mr. Tien-Tsai Lee, it released its first bottling in 2008. T.T. Lee's determination to create Taiwan's first exceptional whisky has elevated Kavalan to the same level as iconic distilleries in Scotland and Japan, notably when in 2012, Jim Murray awarded it the prestigious title of "New Whisky of the Year" in his Whisky Bible thanks to the Solist Fino Sherry Cask. Kavalan is part of the renowned industrial group King Car Group.
Kavalan benefits from a pure and mineral-rich water source from the Snow Mountain and enjoys a unique environment with a combination of tropical heat and high humidity softened by sea and mountain breezes. This warm subtropical climate of Taiwan promotes accelerated maturation of spirits, giving the whiskies intense aromas and remarkable complexity. The distillery applies a traditional rigorous double distillation technique: the first phase separates alcohol and water, while the second consists of three distinct parts — the head, the heart, and the tail. Only the best part of the heart is kept for barrel aging. The careful selection of casks, essential in developing the aromatic profile, is at the core of Kavalan's expertise. Once optimal maturity is reached, the casks are emptied, and the whisky is adjusted with pure "Kavalan" water or bottled as cask strength depending on the edition.
