KAVALAN - Classic Single Malt
Kavalan is an iconic distillery located in Yilan County, Taiwan. Founded in 2005 by visionary entrepreneur Mr. Tien-Tsai Lee, it released its first bottling in 2008. T.T. Lee's ambitious goal to create the first Taiwanese whisky propelled Kavalan to the ranks of the most prestigious distilleries, rivaling Scottish and Japanese traditions. This recognition was solidified when Jim Murray awarded the title of "New Whisky of the Year" to the Kavalan Solist Fino Sherry Cask in the famous 2012 Whisky Bible. The distillery is owned by the powerful King Car Group, ensuring quality and innovation in every bottle.
Kavalan is unique thanks to its pure, mineral-rich waters sourced from Snow Mountain, a key element in the purity of its spirit. The whisky maturation takes place in an exceptional environment combining intense heat and high humidity, softened by Taiwan's sea and mountain breezes. This warm subtropical climate promotes accelerated aging of spirits, allowing complex aromas to develop much faster than in most other whisky regions worldwide. Distillation at Kavalan is a traditional double distillation: the first phase separates alcohol from water, while the second is divided into three fractions - the head, the heart, and the tail. Only the noble part of the heart is selected for maturation in premium casks. The careful selection of casks (ex-Bourbon, Sherry, wine, and others) is fundamental to imparting the whisky its rich flavors. Once optimal maturation is reached, the casks are emptied and adjusted with Kavalan's pure water to achieve the ideal alcohol strength, except for cask strength bottlings.
The Kavalan Classic is an exquisite blend skillfully marrying various types of casks: ex-Bourbon, Sherry, wine casks, as well as multiple refill casks, offering aromatic richness and balanced complexity.
