Kavalan is a prestigious distillery located in Yilan County, Taiwan, globally recognized for the exceptional quality of its whiskies. Founded in 2005 by visionary entrepreneur Mr. Tien-Tsai Lee, it quickly gained fame after its first bottling in 2008. T.T. Lee's ambition was to create the first Taiwanese whisky of excellence, which allowed it to compete with the great distilleries of Scotland and Japan. Notably, the Solist Fino Sherry Cask single malt was crowned "New Whisky of the Year" by Jim Murray in the famous 2012 Whisky Bible. The distillery is part of the solid and innovative King Car Group.
Kavalan draws its pure, mineral-rich waters directly from the source of the Snow Mountain, which gives a unique quality to its spirits. The maturation benefits from an exceptional natural environment: a warm subtropical climate combined with intense heat and humidity, tempered by sea and mountain breezes. This warm subtropical climate accelerates the aging of whiskies, offering rich and complex aromatic profiles that are difficult to achieve in colder regions. The distillery applies a traditional double distillation method: the first step separates alcohol from water, while the second distillation is divided into three distinct parts – the head, the heart, and the tail – only the best heart is kept for barrel aging. The rigorous selection of casks plays a crucial role in defining the final flavors of the whisky. After reaching ideal maturity, the addition of pure "Kavalan" water adjusts the alcohol content for bottling, except in the case of whiskies bottled at cask strength.
This remarkable Single Cask was matured in an old Bourbon barrel (#B150716020A), offering a rich, subtle, and balanced aromatic profile. Bottled at 53.2%, this limited edition was produced in only 168 bottles, making this whisky a rare collector's item sought after by connoisseurs of exceptional spirits.
