Ichiro’s Malt is an independent bottling company of Japanese whisky, renowned for its commitment to authenticity and exceptional quality. Founded by Ichiro Akuto, this iconic brand was born in a modest space in Chichibu, a charming town located about 100 km northwest of Tokyo. With only two small stills, Ichiro Akuto revolutionized the world of Japanese whisky. His expertise comes from a centuries-old family tradition: his grandfather was originally a sake master brewer and head of the legendary Hanyu distillery, established in 1625. This distillery obtained its official license for whisky production in 1941, thus founding a unique heritage. Akuto's father continued this legacy by acquiring two Scottish stills, capable of producing about 400 barrels per year. In 2000, facing the Japanese economic crisis and the decline in sake consumption, the family was forced to sell the business. Nevertheless, Ichiro Akuto turned this challenge into a rare opportunity by recovering the stills and maturing barrels, thus preserving the tradition and quality of their whisky.
Today, Ichiro Akuto pursues excellence by perpetuating the ancestral methods learned at the Hanyu distillery while innovating with an ambitious vision. He is recognized as one of the most talented and determined Japanese distillers. Currently, about 4,000 barrels, aged in Sherry, wine, and Bourbon casks, mature patiently. Moreover, Ichiro Akuto is experimenting with local barley cultivation to create an authentically Japanese whisky, further strengthening his pioneering role in the industry.
Chichibu Paris Edition 2022 is a meticulous blend composed of nine casks of peated Chichibu whisky, mainly aged in ex-Bourbon barrels for six to seven years. This blend offers a refined tasting experience where balanced peat reveals rich and complex notes, showcasing exceptional Japanese craftsmanship.
