Its creator, founder and master distiller Ian Thorn, has over twenty years of experience in the brewing and distilling industry in the United Kingdom, making him a recognized expert. Upon returning to Australia, Ian joined the Starward team where he worked for 7 years as a distiller. Throughout his time at Starward, he gained extensive skills that positioned him as a sought-after consultant. At the same time, he passed on his expertise to the new generation of distillers, supported by his master mentor, and worked with international students for the Institute of Brewing & Distilling. The Gospel revolutionizes the market by applying methods new to Ian Thorn, who until then had mainly focused on malt whisky production using pot stills. Here, The Gospel stands out by producing a rye whisky made with a continuous distillation column, highlighting an innovative and modern approach.
The Gospel Straight Rye is made exclusively from unmalted rye of Australian origin, grown on a unique farm located in the preserved Murray Mallee region of South Australia. This unique origin guarantees optimal quality and traceability. The whisky is distilled twice, then aged for at least two years in carefully selected barrels, in the dynamic and variable climate of Melbourne. This thermal fluctuation, which can reach 20 degrees from one day to the next, contributes to an intense interaction between the alcohol and the wood, promoting a rich, complex, and deeply aromatic maturation. The barrels used for aging The Gospel Straight Rye are made of new American oak, sourced from a craft cooperage in Kentucky that exclusively procures wood from a unique forest, thus ensuring consistent quality. These barrels undergo an intense toasting process with varying levels of charring, optimizing the extraction of the woody and vanilla flavors typical of this legendary region.
