Edinburgh Gin was created in 2010 by Alex Nicol in Edinburgh, Scotland, a region renowned for its exceptional expertise in the art of distillation. Today, the brand operates two production sites strategically located in the heart of the historic city. The West End Distillery is mainly dedicated to limited editions, offering exclusive and original creations. As for the Leith Distillery, inaugurated in 2016 in a former biscuit factory, it has increased the production capacity of the famous London Dry Gin, globally recognized for its authentic taste. Distillation is carried out using two iconic stills: a copper column called Caledonia and a pot still named Flora, ensuring the purity and aromatic richness of the gin. The team of experts works closely with Heriott Watt University, the only academy specialized in distillation in Scotland, thus ensuring unmatched quality and expertise. The rigorous selection of botanicals plays a fundamental role in the unique aromatic profile of this spirit: in addition to traditional juniper berries, Alex Nicol carefully selects coriander seeds, lemon zest, angelica roots, as well as local ingredients such as heather, pine, and thistle, the national emblem of Scotland, which give the gin its distinctive and authentic character.
