Ichiro’s Malt is a prestigious independent bottler of Japanese whisky recognized worldwide. Founded by master distiller Ichiro Akuto in a modest workshop in Chichibu, a charming town located just 100 km northwest of Tokyo, the distillery began with two small artisanal stills. Ichiro Akuto's expertise is rooted in family tradition: his great-grandfather was a renowned maker and leader of a sake brewery, the historic Hanyu distillery, founded in 1625. In 1941, it received an exclusive license to produce whisky, paving the way for a long lineage of enthusiasts. Ichiro’s father continued this vocation with determination by acquiring two Scottish stills capable of producing about 400 barrels per year. However, in 2000, facing economic decline in Japan and decreasing sake consumption, the family had to sell the business. Visionary Ichiro Akuto turned this crisis into an opportunity by reclaiming the stills and the precious maturing whisky barrels from the new owners.
Today, Ichiro Akuto brilliantly applies the ancestral and innovative techniques he perfected at the Hanyu distillery, making him one of the most ambitious and respected Japanese distillers in the industry. Approximately 4,000 whisky barrels, matured in sherry, wine, and bourbon casks, are currently aging in his warehouses. At the same time, he is developing innovative projects, including local barley cultivation, to create a 100% Japanese whisky combining authenticity and excellence.
