The Waterford Distillery is ideally located in the historic city of Waterford, Ireland, globally recognized for the exceptional quality of its ingredients and its innovative approach. This exceptional project was initiated by Mark Reynier, famous for orchestrating the revival of Islay Bruichladdich Single Malt whisky, inspired by the greatest winemakers and their artisanal methods. Housed in a former factory originally designed by Diageo in 2004, the distillery was completely revamped in 2015 to become a leading site for the production of authentic terroir whiskies. Every stage of production highlights the origin of the barley, its terroir, as well as sustainable farming practices. In close collaboration with 86 Irish farms spread across 19 distinct soils, including organic and biodynamic barley, Mark Reynier ensures rigorous traceability and unique quality. Thanks to a sophisticated digital logistics system, each farmer's harvest is collected, stored, malted, and then distilled individually to preserve all the terroir characteristics.
Fenniscourt 1.1 is made from barley grown by Ger Byrne on his eponymous Fenniscourt farm. The harvest took place on August 10, 2017, followed by distillation between September 10 and 17, 2018. The peat used comes from the Ballyteague region in Kildare, providing a distinctive peated signature. Maturation lasted 3 years, 8 months, and 5 days in a meticulously chosen combination of casks: 33% first-fill American oak barrels from Jack Daniels and Buffalo Trace distilleries, 29% sweet natural wine casks from Sauternes and Sherry Oloroso, 20% French oak barrels from prestigious vineyards Château Latour and Lafite Rothschild, and 18% virgin American oak barrels from Kelvin Cooperage. This complex process gives the whisky an unparalleled aromatic richness and depth. Production is limited to only 11,898 bottles, ensuring precious rarity.
