Kavalan is a renowned distillery located in Yilan County, Taiwan. Founded in 2005 by visionary entrepreneur Mr. Tien-Tsai Lee, it released its first edition in 2008. T.T. Lee's ambition to create Taiwan's first exceptional whisky propelled Kavalan to the rank of prestigious distilleries, recognized worldwide alongside the sacred houses of Scotland and Japan. It was notably acclaimed when Jim Murray awarded it the title of "New Whisky of the Year" for the Solist Fino Sherry Cask in his 2012 Whisky Bible. Kavalan is part of the powerful King Car Group.

Kavalan draws its unique mineral waters from the melting snows of Snow Mountain and benefits from exceptional aging in a warm and humid subtropical climate, softened by sea and mountain breezes. This very particular climate accelerates maturation, bringing the whisky a rare richness and complexity, incomparable to traditional whisky terroirs. The distillery applies a rigorous double distillation process: a first phase to separate alcohol and water, followed by a distinct second phase in three parts – heads, heart, and tails – of which only the best part of the heart is carefully collected to be aged in casks. The careful selection of casks is essential, profoundly influencing the aromas and texture of the whisky. At optimal maturity, the casks are precisely emptied and diluted with pure "Kavalan" water, unless bottled as cask strength.

Kavalan Triple Sherry Cask stands out for a rare and prestigious blend combining three types of old sherry wine casks: Oloroso, Pedro Ximénez, and Moscatel, giving the whisky an exceptionally rich aromatic palette blending fruity, spicy, and sweet notes.
