Kavalan is a prestigious distillery located in Yilan County, in the heart of Taiwan. Founded in 2005 by the visionary entrepreneur Mr. Tien-Tsai Lee, it released its first bottling in 2008. Tien-Tsai Lee's ambition to create the very first authentic Taiwanese whisky quickly propelled Kavalan among the most respected distilleries worldwide, rivaling the legendary houses of Scotland and Japan. This international recognition was notably strengthened when Jim Murray awarded their Solist Fino Sherry Cask the prestigious title of "New Whisky of the Year" in his 2012 Whisky Bible. Kavalan draws its pure waters, rich in essential minerals, directly from the Snow Mountain. The maturation of the spirits benefits from an exceptional combination of intense heat and moderate humidity, softened by unique sea and mountain breezes specific to the region. This warm subtropical climate of Taiwan provides an accelerated aging speed, allowing the whiskies to develop complex aromas in a shorter time compared to other traditional whisky-producing regions. The distillery applies a rigorous double distillation: the first separates alcohol and water, while the second, in three phases (heads, heart, tails), selects only the best heart for barrel maturation. The meticulous choice of casks is crucial and directly influences the final aromatic richness. "Kavalan" water is then added to adjust the alcohol strength, except when the whisky is bottled at cask strength.
This exclusive expression, carefully selected by La Maison du Whisky in its Conquête collection, comes from a unique and rare cask, numbered #0111125042A, which previously contained Port wine. The whisky was distilled, aged, and bottled at natural cask strength in Taiwan, ensuring a rich, powerful, and authentic tasting experience. This limited edition includes only 185 numbered bottles, not to be missed by discerning enthusiasts.
