Kavalan is a renowned distillery located in Yilan County, Taiwan. Founded in 2005 by visionary entrepreneur Mr. Tien-Tsai Lee, it released its first bottling in 2008. Since then, Kavalan has established itself as a key reference in the whisky world, competing with major Scottish and Japanese distilleries. This success was notably confirmed when Jim Murray awarded it the prestigious title of "New Whisky of the Year" for the Solist Fino Sherry Cask in his 2012 Whisky Bible. Kavalan is an integral part of the Taiwanese industrial group King Car Group.
Kavalan draws its crystal-clear, mineral-rich waters from the heart of the Snow Mountain range and matures its whiskies in an eclectic combination of intense heat and humidity, softened by sea and mountain breezes. Taiwan's warm subtropical climate remarkably accelerates the maturation of spirits, much faster than in most traditional whisky-producing regions. The distillery applies the traditional method of double distillation: the first step separates alcohol from water, while the second is carefully divided into three fractions — the head, the heart, and the tail. Only the best part of the heart is selected for barrel aging, ensuring optimal quality. The meticulous selection of casks plays a crucial role in the whisky's aromatic profile. Once the ideal maturity is reached, the chosen casks are carefully emptied, then pure water from the "Kavalan" source is adjusted to obtain the perfect alcohol content for bottling, except when it is a cask strength bottling.
This exclusive expression selected by La Maison du Whisky in its prestigious Conquête range comes from a single virgin oak cask (#N090220019). This whisky was distilled, matured, and bottled at cask strength directly in Taiwan. Only 101 numbered bottles were produced, making this edition a very rare and sought-after piece for collectors and lovers of exceptional whiskies.
