The Waterford Distillery is located in the charming town of Waterford, Ireland. This innovative project was launched by Mark Reynier, the visionary man behind the revival of Islay Single Malt whisky, notably Bruichladdich. Inspired by the great master winemakers worldwide, this project combines traditional know-how with modernity. Originally built by Diageo in 2004, the facility was converted into Waterford Distillery in 2015 to produce exceptional whiskies.
Waterford's specialty lies in creating terroir whiskies, highlighting the precise origin of the barley, the terroir, and cultivation methods. Mark Reynier works closely with 86 Irish farms growing barley on 19 different soil types, integrating organic and biodynamic farming. Thanks to an advanced digital logistics system, each harvest is meticulously collected, stored, malted, and then distilled separately to ensure optimal traceability and quality.
Biodynamic Luna 1.1 is made exclusively from biodynamic barley sourced from the farms of Trevor Harris, John McDonnell, and Alan Mooney located respectively in Coilltroim, Shalvantown, and Portgloriam. The barley was harvested during the summer of 2017 and distilled between March 7 and 12, 2018. The complex maturation lasted precisely 3 years, 2 months, and 1 day, imparting finesse and character to the whisky. The final blend was assembled on May 19, 2021, and bottled in September 2021, with a combined aging of 35% first-fill American oak, 26% premium French oak, 22% Vin Doux Naturel casks, and 17% virgin American oak. A total of 21,000 exceptional bottles were thus produced.
