The Bimber Distillery, proudly established in London, England, was born from the passion of two true whisky enthusiasts, Ewelina Chruszczyk and Dairusz Plazewski. Their ambition? To produce an exceptional Single Malt, rich in character and authenticity, using carefully preserved traditional methods that are now rare. Every step is meticulously controlled: the barley is grown on a single farm, malted on the floor in an artisanal way, crushed by hand, then slowly fermented for seven days in wooden vats, themselves handmade in their own cooperage. The small copper stills are heated directly by fire, ensuring precise distillation that respects the product. The spirit then ages in casks carefully selected by hand to reveal its full aromatic richness. Finally, the whisky is blended and bottled on site, guaranteeing optimal quality and perfect control. The first casks were filled on May 26, 2016, and marketed three years later, in September 2019. This exclusive limited series of 1,000 hand-numbered bottles sold out in just 3 hours. Since 2020, Bimber has diversified its range with new Single Malts, consolidating its reputation for excellence.
This prestigious edition was specially selected by Clos des Spiritueux. This Single Cask (#30), rich with a unique history, first matured in a cask that contained Port wine, before producing a limited edition of 290 bottles of remarkable finesse.
