Kavalan is a renowned distillery located in Yilan County, Taiwan, globally recognized for its exceptional whiskies. Founded in 2005 by the visionary entrepreneur Mr. Tien-Tsai Lee, it released its first bottling in 2008. Driven by the ambition to create the first Taiwanese whisky of international stature, T.T. Lee elevated Kavalan to the status of iconic distilleries, comparable to prestigious houses in Scotland and Japan. This recognition was notably confirmed in 2012 when Jim Murray awarded the "New Whisky of the Year" prize to the Solist Fino Sherry Cask in his famous Whisky Bible. Kavalan is an integral part of the industrial and agri-food group King Car Group.
The distillery benefits from pure, mineral-rich water sourced from the eternal snows of Snow Mountain. The whisky undergoes a unique maturation thanks to the combination of intense subtropical heat and high humidity, tempered by sea and mountain breezes. This warm subtropical climate promotes accelerated maturation of the spirits, much faster than in traditional whisky-producing regions. Kavalan applies a rigorous double distillation method: the first separates alcohol and water, while the second, divided into three phases (heads, heart, and tails), selects exclusively the best part of the heart for barrel aging. The careful selection of casks is crucial for the aromatic richness and complexity of the whisky. Once optimal maturation is reached, the casks are emptied and pure "Kavalan" water is added to adjust the alcohol by volume, except in the case of cask strength bottlings.
This exceptional Single Cask was aged in virgin oak casks, offering remarkable aromatic intensity, then bottled at 51.6% alcohol. This limited edition is particularly rare, with only 124 bottles produced.
