Kavalan is a prestigious distillery located in Yilan County, Taiwan. Founded in 2005 by visionary entrepreneur Mr. Tien-Tsai Lee, it released its first bottling in 2008. T.T. Lee's ambition to create the very first Taiwanese whisky quickly placed Kavalan among the most revered distilleries in the world, rivaling Scottish and Japanese legends, especially after Jim Murray awarded the Solist Fino Sherry Cask the prestigious title of "New Whisky of the Year" in his famous Whisky Bible 2012. This renowned company belongs to the powerful King Car Group.
Kavalan draws its crystal-clear waters, naturally rich in essential minerals, directly from the pure source of the majestic Snow Mountain. Its whiskies mature under the influence of a unique combination of intense heat and high humidity, softened by cool sea and mountain breezes. This hot and humid subtropical climate of Taiwan promotes accelerated maturation of spirits, much faster than in most traditional whisky-producing regions. The distillery applies a rigorous double distillation method to ensure optimal quality: the first step separates alcohol from water, then the second distillation divides the distillate into three distinct parts: the head (the first alcohols), the heart (the noble and most refined part), and the tail (the last alcohols). Only the best portion of the heart is retained to be transferred into casks during maturation.
The meticulous selection of casks is a crucial element in developing the aromas and flavor complexity of Kavalan whisky. When maturation reaches the ideal point, the carefully selected casks are emptied, then diluted with pure "Kavalan" water to precisely adjust the alcohol strength, except for versions bottled at cask strength.
This rare and remarkable Single Cask was aged in an old rum cask, an influence that brings exotic and rich notes, before being bottled at a powerful 55.6%. This exclusive limited edition counts only 150 bottles, making it a highly sought-after treasure for collectors and discerning whisky enthusiasts.
