Kavalan is a renowned distillery located in the picturesque county of Yilan, in Taiwan. Founded in 2005 by visionary entrepreneur Mr. Tien-Tsai Lee, it quickly established itself on the international scene with its first bottling in 2008. T.T. Lee's ambition to create the very first exceptional Taiwanese whisky propelled Kavalan among the iconic distilleries of Scotland and Japan. This recognition was further strengthened when Jim Murray awarded the Solist Fino Sherry Cask the prestigious title of "New Whisky of the Year" in his 2012 Whisky Bible. The distillery is an integral part of the King Car Group, a major player in the spirits industry.
Kavalan draws its waters from remarkable purity, rich in minerals, sourced from the Snow Mountain, thus contributing to the unique quality of its whiskies. The aging takes place in an exceptional environment where a unique combination of intense heat and high humidity is subtly modulated by sea and mountain breezes. Taiwan's warm subtropical climate significantly accelerates the maturation of spirits compared to traditional whisky-producing regions. The distillery rigorously applies double distillation, a crucial method in the finesse of the final product: the first step separates alcohol from water, then the second distillation is divided into three parts — the head, the heart, and the tail. Only the noblest part, the heart, is kept to be aged in carefully selected casks. The choice of casks is decisive as it profoundly influences the aromatic profile and complexity of the whisky. When the whisky reaches ideal maturity, the casks are emptied and adjusted with pure "Kavalan" water to achieve the perfect alcohol level, unless the whisky is bottled at cask strength.
