Gin Mare
The Gin Mare distillery is a 13th century chapel located in an old fishing village between the Costa Brava and the Costa Dorada, near Barcelona, Spain . Brothers Marc and Manuel Giro Jr are the fourth generation of distillers. They sought to create a new Mediterranean-inspired gin using only locally sourced botanicals.
The key ingredient is Arbequina olives , grown in the local Catalan region. To make Gin Mare, 15 kilos of olives are used in each batch of distillation. Other herbs are rosemary (from Greece), basil (from Italy) and thyme (from Turkey), as well as the classics coriander (from Morocco), cardamom (from Sri Lanka), citrus fruits and, of course, the Juniper berries. The citrus fruits are sweet oranges from Seville, bitter oranges from Valencia and lemon from Lérida. Each maceration contains 14 kg of macerating zest in 40 liters of neutral alcohol. The plants are macerated separately for more than 36 months and then individually distilled.
