The Kyoto distillery, a pioneer of artisanal gin in Japan, benefits from an exceptional location in Minami-Ku, south of Kyoto, near the prestigious Fushimi region, renowned for centuries for producing nihon-shu (traditional Japanese sake). This unique terroir offers unparalleled richness in natural raw materials: the crystalline waters of Fushimi and a remarkable diversity of carefully selected local ingredients, such as yuzu, sansho pepper, and the famous Uji teas, a true jewel of Japanese heritage.
The KI NO BI Kyoto Dry Gin is crafted following a meticulous and innovative artisanal process: botanical extracts are carefully divided into six distinct categories — base, citrus, tea, herbs, spices, and flowers — then each group is separately macerated in rice alcohol before independent distillation. This technique preserves and enhances the specific aromas of each plant. The distillates are then harmoniously blended and left to mature so that the flavors perfectly meld and create a remarkable and authentic gustatory balance in the gin.
The "G" edition stands out for its unique aging in oak barrels from the Argonne forest in Champagne, previously used for maturing the prestigious Henri Giraud champagnes. This maturation imparts to the gin a delicately vanilla-wooded roundness and a subtle fruity profile, which wonderfully complements the complex blend of original botanicals, offering a sensory experience of rare elegance and depth.
