The Kyoto Distillery is Japan’s first dedicated artisanal gin distillery. It is based in Minami-Ku, in the south part of Kyoto City, close to the Fushimi region, famed for hundreds of years for its production of nihon-shu (Japanese Sake). This location offers an abundance of raw materials: the soft waters of Fushimi and a huge selection of locally-grown ingredients such as yuzu, sansho and the legendary teas of Uji.
KI NO BI Kyoto Dry Gin is made with a particularly intricate production method: Botanicals are separated into six different categories (base, citrus, tea, herbal, spice and floral), each category is then macerated in rice spirit before being distilled individually. The distillates are then blended together before being left to marry together which allows the disparate flavours to harmonise, giving perfect balance in the gin.
Edition “G” is a dry KI NO BI gin that has been aged in oak barriques sourced from the Champagne region’s Argonne Forest and previously used to mature Henri Giraud’s finest Champagne. The fruitiness and vanilla oaky influence are in perfect harmony with the original botanical blend.
