Distilled, blended and bottled in Kyoto, KI NO BI – Kyoto Dry Gin (“the beauty of the seasons”) features a base of rice spirits and pure water from the Fushimi brewing district, for a clean and elegant expression at 45.7% vol. Its dry style, imbued with a distinctly Japanese accent, combines precision and aromatic delicacy.
The house separates its botanicals into six families—Base, Citrus, Tea, Herbaceous, Spice, Fruity & Floral—distilled individually before blending for harmony. Key ingredients include yuzu and lemon, sanshō (and kinome), ginger, Uji gyokuro tea, bamboo leaves, red shiso, and akamatsu (Japanese red pine) alongside juniper and iris. This fractionation and blending process delivers remarkable aromatic clarity and a crystalline texture.
On the nose, the bright freshness of yuzu intertwines with a spicy thread of sanshō. The palate, precise and dry, lets the juniper carry the Japanese botanicals, while the finish gently warms with ginger and a delicate nuance of gyokuro. Serve it as a G&T (yuzu or lemon zest), a clean Martini, or in a Yuzu Gimlet to highlight its citrus structure and mineral purity.
