Discover the Domaine Dupont, located in Victot-Pontfol, in the heart of the Pays d’Auge, in the Calvados department, a region renowned for the excellence of its apple brandies. Since 1887, the Dupont family has been perpetuating a unique artisanal know-how, passed down through four generations. This family estate now spans 30 hectares of orchards, passionately cultivating ancient varieties to produce traditional ciders, Normandy pommeau, and, of course, exceptional Calvados.
Known for its pursuit of extreme quality, Domaine Dupont practices manual apple selection to guarantee exceptional raw materials, a rarity in the cider world. The involvement of an oenologist and respect for traditional methods enhance each batch. This expertise is reflected in the meticulous cider vinification process destined for Calvados, aged for 6 months on fine lees to intensify the richness of aromas and refine the sensory palette of the future spirit.
After fermentation, the Calvados undergoes double distillation, one month after obtaining the cider, thus preserving the aromatic intensity of the fruit. The aging continues in oak barrels: first in new barrels with gentle heating for 3 months, which gives the brandy elegance and subtle vanilla aromas, then in old barrels, for a long aging that amplifies the complexity and depth of the Calvados.
The Calvados Reserve from Domaine Dupont, offered by Clos des Spiritueux, comes from a carefully crafted blend of bittersweet apples (80%) and tart apples (20%). The fruits, rigorously sorted, are mixed, crushed, then pressed to extract a clear must. The complete fermentation of the juice produces a pure cider intended for distillation. Aging for at least 3 years in 400-liter toasted oak barrels (including 25% new barrels) ensures a magnificent evolution of the Calvados Reserve, revealing intense fruity aromas, spicy nuances, and incredible elegance on the palate.
