The Waterford Distillery is located in the heart of the historic city of Waterford, in Ireland. This innovative project was launched by Mark Reynier, visionary and craftsman behind the revival of Islay's Bruichladdich Single Malt whisky, deeply inspired by the world's greatest winemakers. Initially established by Diageo in 2004, the distillery was completely redesigned in 2015 to create a modern facility dedicated to terroir whisky. Production places a major emphasis on the quality and traceability of barley, a key element, highlighting its origin, the soil where it is grown, and the agricultural methods used. To ensure exceptional diversity and finesse, Mark Reynier works closely with 86 Irish farms cultivating barley across 19 distinct terroirs, including organic and biodynamic practices. Thanks to highly advanced digital logistics, each barley harvest is carefully collected, stored, malted, and then distilled separately to preserve the uniqueness of each grain and allow a pure expression of the terroir.
Ballybannon 1.1 is an exceptional Single Malt made exclusively from barley grown by Tony Pender on his iconic Ballybannon farm. The barley was carefully harvested on August 8, 2017, then distilled between September 17 and 25, 2018. The peated intensity of this whisky comes from peat harvested at Ballyteague, County Kildare. Its rare and complex maturation lasted precisely 3 years, 8 months, and 7 days, in a unique blend of casks: 38% first-fill American oak barrels from the famous Jack Daniels and Tennessee Dickel distilleries, 30% French oak barrels that previously held grand crus from Château Margaux and Palmer, 21% virgin American oak barrels from Kelvin Cooperage, and finally 11% sweet natural wine casks from Sauternes. This rigorous selection gives the whisky unmatched aromatic complexity and depth. In total, 11,088 bottles of this limited edition were produced, making this Single Malt a treasure for discerning enthusiasts and collectors.
