Cachaça - Abelha Silver Organic
Abelha is an exceptional brand of artisanal cachaça produced in Rio de Contas, in the emblematic region of Bahia, Brazil. Founded in 2009, this unique initiative results from the alliance between Marcos Vaccaro, a recognized master distiller and pioneer of the first certified organic cachaça in Brazil, and the innovative group Responsible Trading Company, based in the United Kingdom, sharing the same ecological and ethical values. Together, they are dedicated to training and certifying local farmers in the sustainable production of organic sugarcane, preserving traditional and natural agricultural methods, and crafting a premium organic cachaça of unparalleled purity and quality. The name Abelha (meaning "bee" in Portuguese) pays tribute to the thousands of Brazilian bees gathering nectar from freshly extracted sugarcane juice during distillation, also symbolizing the dedication of a passionate team managing a self-sufficient, sustainable, and community-oriented farm.
The sugarcane is grown on sandy and rich soils of the highlands where the significant temperature variation between day and night, combined with fertile soil and pure spring water, promotes the growth of exceptionally high-quality cane. The harvest is carefully done by hand, selectively according to the optimal degree of maturity and sugar content. The pressed cane must then be fermented within a strict 24-hour timeframe to ensure the best organoleptic quality. The fermentation produces the "cachaça vinho," which is then slowly distilled in traditional 800-liter copper stills, thus offering richness and complexity to the final product.
Abelha Silver benefits from a controlled aging of 6 months in open stainless steel tanks, a natural process that allows the evaporation of by-products and slight oxidation. This process gives this cachaça its subtle aromatic bouquet, finesse, and freshness typically sought after by connoisseurs.
