The Waterford Distillery, located in the charming city of Waterford in Ireland, embodies the excellence of Irish terroir whisky. This innovative project was launched by Mark Reynier, a visionary known for revitalizing Islay Bruichladdich Single Malt whisky, inspired by the principles of the world's best winemakers. Originally established by Diageo in 2004, the distillery was transformed in 2015 into a unique production site in the whisky world. Waterford's philosophy is based on valuing the origin of barley, its terroir, and its cultivation method, making each whisky a true expression of its soil. In partnership with 86 Irish farms, the distillery cultivates barley on 19 distinct terroirs, integrating organic and biodynamic practices. Thanks to an advanced digital logistics system, each harvest is rigorously collected, stored, malted, and distilled separately to guarantee the authenticity and full traceability of every grain.
Ballyroe 1.1 is made exclusively from barley grown by Simon Neville on his farm named Ballyroe. The harvest took place on August 13, 2015, and distillation occurred between March 22 and April 5, 2016. This edition benefited from maturation of 4 years, 6 months, and 30 days, refined in a meticulous blend of casks: 36% first-fill American oak, 24% French barrels that previously held the prestigious Mouton Rothschild wine, 21% American virgin oak casks, and 19% fortified wine casks. An exceptional total of 9,384 bottles were produced, making this release a sought-after rarity among connoisseurs.
