El Rey Zapoteco is an exceptional artisanal Mezcal, carefully crafted by the second generation of the prestigious Hernandez family in the iconic Matatlán region, Oaxaca, Mexico. This premium Mezcal results from rigorous traditional know-how, encompassing every step from the sustainable and respectful cultivation of the maguey agave to meticulous bottling.

The process begins with the manual harvesting of leaves and roots only when the agave reaches full maturity, between 8 and 30 years depending on the variety, retaining only the heart called the "piña" (pineapple in Spanish, referring to its shape). The piñas are then cut into pieces and slowly cooked for several days in a traditional underground oven using wood and natural stones, promoting the development of the typical and complex aromas of Mezcal. Once cooked, the pieces are crushed in a stone molino pulled by a horse, slowly extracting the precious juice.

The crushed agave pulp is placed to ferment in wooden vats made of pine and natural oak, where only the wild yeasts present in the environment allow an authentic fermentation without the addition of commercial yeasts. The fermented must, called "tepache", is then distilled twice in traditional copper stills to obtain a pure, elegant, and powerful spirit. Some Mezcal batches may also be aged in oak barrels, imparting woody notes and additional complexity. After this aging, the Mezcal is returned to the "guardianes" (copper stills) for a final distillation aimed at removing any residual water traces and ensuring optimal purity.
