The Waterford distillery is nestled in the charming historic town of Waterford, in Ireland, at the heart of a region renowned for its unique whisky craftsmanship and tradition. This exceptional project was initiated by Mark Reynier, a visionary known for orchestrating the revival of the prestigious Islay single malt Bruichladdich, drawing inspiration from the practices of the world's greatest winemakers to revolutionize the whisky approach.
Originally established by the giant Diageo in 2004, the distillery was converted in 2015 to fully dedicate itself to the production of exceptional terroir whiskies, highlighting the distinctive origin of the barley, its unique terroir, and traditional as well as organic and biodynamic farming methods. Mark Reynier works closely with a network of 86 Irish farms, spread across 19 distinct soil types, ensuring remarkable traceability and aromatic diversity. Thanks to an ultra-sophisticated digital logistics system, each harvest is rigorously collected, stored, malted, and distilled separately to preserve the identity of the original terroir.
Lakefield 1.1 is made exclusively from barley grown by Seamus Duggan on his eponymous farm, Lakefield. This exceptional barley was harvested on September 11, 2016, then precisely distilled between March 4 and 12, 2017. The extended maturation of this whisky lasted exactly 3 years, 7 months, and 28 days, in a meticulous selection of casks, including 46% first-fill American oak casks, 23% virgin American oak casks, 16% fortified wine casks, and 17% French oak casks. This unique combination gives the cuvée complex, balanced, and indulgent notes. In total, only 30,528 bottles were produced, making this edition rare and precious.
This whisky is non-peated, highlighting the purity and authentic expression of its Irish terroir without smoky influence.
