PJ and Denise Rigney, passionate founders, lead an expert team of dedicated distillers who innovatively explore wild Irish grains, exceptional local flora, and carefully selected exotic plants. The Shed Distillery has unique equipment with five copper stills: three dedicated to Irish whiskey production, two for distilling Drumshanbo Gunpowder Irish Gin, and two copper column stills devoted to the Irish vodka Sausage Tree Pure. These stills were specially designed and manufactured by Arnold Holstein in Germany before being transported to Drumshanbo to ensure impeccable artisanal quality.
The distillation process of Gunpowder Irish Gin is a masterpiece of expertise: it begins with a slow distillation where 8 authentic botanicals are meticulously integrated into the copper still: fresh juniper berries, meadowsweet with delicate aromas, precious cardamom, aromatic coriander seeds, angelica root, iris root, caraway seeds, and star anise. Secondly, 4 carefully chosen plants are added in the vapor basket to perfect the flavoring: energizing "gunpowder" tea, zested Chinese lemon, vibrant oriental grapefruit, and refreshing kaffir lime, giving this gin a remarkable, intense, and perfectly balanced taste signature.
The emblematic creature featured on the label is a mythological figure symbolizing the enigmatic fusion between an agile hare and an elegant American antelope. According to local legend, this fascinating creature was born amid a powerful storm, further enhancing the mystery and evocative strength of this exceptional spirit.
