WATERFORD - Ballymorgan - Edition 1.1 - 50%
The Waterford Distillery is located in the historic city of Waterford, in Ireland, at the heart of a region renowned for the exceptional quality of its terroir. This visionary project was launched by Mark Reynier, the renowned expert behind the revival of Islay Bruichladdich Single Malt whisky, and deeply inspired by techniques used by the world's greatest winemakers. Waterford Distillery is a modern facility, initially built by Diageo in 2004, then transformed into an artisanal distillery in 2015 to produce premium terroir whiskies that highlight the richness and uniqueness of the soil and local culture. Waterford's specificity lies in its innovative approach: the origin of the barley, its growing environment, and farming practices are key elements in the creation of each whisky. In partnership with 86 renowned Irish farms, Waterford cultivates barley on 19 distinct soils, including organic and biodynamic farming methods, thus ensuring impeccable quality and traceability. Thanks to an advanced digital logistics system, each farmer's harvest is collected, stored, malted, and distilled separately, ensuring meticulous quality control at every stage.
Ballymorgan 1.1 takes its name from the iconic farm of Robert Milne. The barley used was harvested precisely on September 13, 2015, then distilled between May 26 and June 4, 2016. The exceptional maturation lasted 3 years, 10 months, and 23 days, giving the whisky a rare complexity and remarkable finesse. The final barrel assembly took place on May 6, 2020, before bottling on July 8, 2020, with meticulous aging using 37% new American oak barrels, 27% French oak barrels, 18% virgin American oak barrels, and 18% fortified wine barrels. This exclusive release is limited to only 9,000 bottles, making this exceptional whisky unique for discerning enthusiasts.
