The Waterford Distillery, a key player in the premium spirits world, is located in the historic city of Waterford, Ireland. This exceptional project was launched by Mark Reynier, a visionary known for reviving the reputation of Islay's Bruichladdich Single Malt whisky. Inspired by the greatest international winemakers, he applied the same principles of terroir and traceability to whisky. Originally built by Diageo in 2004, this distillery was revamped in 2015 to produce unique whiskies highlighting the concept of terroir. Production emphasizes the precise origin of the barley, its place of cultivation, and its methods, thus guaranteeing high-quality whiskies. Mark Reynier works closely with 86 Irish farms, cultivating barley on 19 distinct soil types, including organic and biodynamic farming. Thanks to a sophisticated digital logistics system, each batch of barley is harvested, stored, malted, and distilled separately to preserve the uniqueness of the terroir.
Bannow Island 1.2 draws its essence from the farm of Ed Harpur, located on the island of the same name. The barley was harvested on September 7, 2015, and distilled between June 4 and 17, 2016. This exceptional whisky underwent careful maturation for 3 years, 10 months, and 22 days. The aging is carried out in a harmonious combination: 36% in new American oak barrels, 26% in sweet natural wine casks, 21% in virgin American oak barrels, and 17% in French oak barrels, imparting a unique aromatic complexity. An exclusive edition of 9,000 bottles was produced, aimed at discerning enthusiasts and passionate terroir whisky lovers.
