The Waterford Distillery, a handcrafted gem located in the historic city of Waterford in Ireland, embodies the excellence of terroir Single Malt whisky. This innovative project was launched by Mark Reynier, a visionary known for the revival of Islay whisky with Bruichladdich, drawing inspiration from the world's greatest winemakers. Originally founded by Diageo in 2004, the distillery was repurposed in 2015 to create a unique production highlighting the very root of whisky: the origin and quality of the barley. Waterford Distillery works closely with 86 Irish farms, spread over 19 distinct soils, including organic and biodynamic barley crops. This exclusive process guarantees complete traceability through a sophisticated digital logistics system, allowing each batch of barley to be harvested, stored, malted, and distilled separately to preserve the authentic characteristics of each terroir.
Ballykilcavan 1.2 comes from the eponymous farm of David Walsh-Kemmis. The barley was harvested on August 17, 2015, then distilled between February 4 and 9, 2016. The aging lasted precisely 3 years, 11 months, and 18 days, offering optimal maturation in casks. The final whisky blend took place on February 5, 2020, before careful bottling on July 8, 2020. This Single Malt is aged in 55.5% new American oak casks, 22% French oak casks, and 22.5% sweet wine casks, providing a complex and refined balance. Only 9,000 bottles of this rare edition were produced, making it a prized collector's item.
This whisky is non-peated, thus revealing the pure expression of Irish barley and soil.
